Kumamoto Castle celebrated its 400th anniversary in 2007, and Honmaru Goten Palace has been restored today as part of Kumamoto Castle Restoration and Improvement Project.
Honmaru Gozen set meal was born to serve people the dishes based on the food culture of Edo period.
The “Kumamoto Retainers’ Book of Recipes” is a recreation of Edo Period meals based on two books: “Ryori Katahi (1803)”, a valuable secret book of Kumamoto dishes; and “Saijiki (1817)”, an early-modern collection of Kumamoto foodstuffs and dishes.
We have further edited the “Kumamoto Retainers’ Book of Recipes” in order to create the Honmaru Gozen set meal. It is the Samurai cuisine which was reproduced to match the taste of nowadays including Higo food ingredients.
